01 / ABOUT THE PLACE

About this place

Substantial, chewy curly noodles, a robust broth packed with pork savor and assertive shoyu sauce, and tender simmered cabbage and bean sprouts define the bowl here. Ramen Fujimaru sits along Meiji-dori near Kajiwara Station on the Toden Arakawa tram line. The dense, wheat-forward noodles, thick slices of seasoned pork, and a half boiled egg create a deeply satisfying presence in the bowl.

Customizing Your Portion and Toppings

When visiting for the first time, portion size is the main factor to consider. The regular portion weighs around 400 g before boiling, an exceptionally generous serving compared to conventional ramen. To finish comfortably, opt for the smaller "sukuname" around 300 g or "hanbun" (half) around 200 g. You can also customize minced garlic, pork fat, and vegetable volume to add punch and richness to the bold broth.

Enhancing Flavor with Seasoned Pork Fat and Raw Egg

A quintessential Fujimaru ritual is ordering seasoned pork fat (butakasu abura) and a raw egg in separate small bowls. Dipping the thick noodles into the sweet-savory seasoned fat coats them in pork flavor that highlights the wheat aroma. Swirling noodles through lightly beaten egg creates a sukiyaki-like, mellow finish that tempers the steaming heat. Add-ons like torched pork belly and "shiro," which lets you enjoy a portion of the noodles brothless, offer further ways to customize.

Kajiwara Branch Specials and Tsukemen

Beyond the staple ramen, the Kajiwara branch offers its own distinct variations. You might find ginger-soy ramen that warms with clean aromatics, spicy fish-powder tsukemen, or the weekday-only Kajiwara Abura Soba. Tsukemen features chilled thick noodles with a pronounced chew and aroma, perfect for dipping into broth rich with floating pork fat.
